CRAFTING AN AGILE RESTAURANT + MARKET FOR A POST-PANDEMIC WORLD

In these uncertain times, we challenged ourselves to think about how restaurants can adapt to the (sometimes weekly) changing restrictions around opening, how they can serve, and capacities. Thus was born the concept of “Pivot.”
Part restaurant and bar, part market, part takeout window - Pivot has the ability to adapt and change quickly and easily to keep things running (and keep people fed). One system in place: artistic panels that give a physical divide without feeling clinical - and they can pivot 360 degrees to give myriad seating opportunities for various size parties.
AN ADAPTABLE PHYSICAL SEPARATOR THAT ALSO ACTS AS AN ART MOMENT
Using a mix of materials that bring color and transparency, the pivot panels take inspiration from the Art Deco and Memphis design styles to make something unique and visually interesting.
These same motifs and shapes can be seen throughout the space, along with an abundance of greenery and color to make your surrounding feel clean, safe, and inviting.
By using a small part of the restaurant to serve as a market with essential goods, meal kits (and of course alcohol), Pivot becomes a one-stop-shop for food in the neighborhood. And, those save Pivot panels make the market not only adaptable, but also be able to switch into restaurant seating during peak times.
By adding in an exterior takeout window, the restaurant and market can still serve customers even if they can’t (or are wary of) entering.
COMBINING A MARKET AND TAKE-OUT WINDOW CONCEPT ALLOWS FOR BUSINESS TO THRIVE EVEN IN THE CASE OF CLOSURE.
